"Ranman Dry Koji" is a dried koji made using Akita Prefecture's "Ginsan" rice and an original koji mold developed in Akita, produced with the sake brewery's koji-making techniques. Compared to conventional koji, it has lower browning (tyrosinase activity) and higher enzyme activity (glucoamylase activity). Additionally, due to its low moisture content, it can be stored for a long time.
