Additionally, compared to conventional reel ovens, the incorporation of lava stones inside the chamber significantly increases heat retention. While it is designed for medium-scale production, it also demonstrates excellent performance in baking. Originally intended for medium-scale use, smaller sizes have recently been made available, utilizing the advantages of the rotating structure, and it has been introduced in small shops operated solely by women for baking. The internal structure has been streamlined to achieve cost reduction. The production capacity uses lava stones in the furnace, just like our conventional products. Lava is used from the world heritage site, Mount Fuji. (As of September 2024) By baking with far infrared rays generated from the lava, the center of the dough is cooked, allowing for baking at high temperatures in a short time. Baking in a short time prevents excess moisture from escaping, resulting in a moist interior of the bread. Due to the high temperature, the outside becomes crispy.
