ε-Polylysine (hereinafter referred to as Polylysine) is a substance officially known as ε-poly-L-lysine. It has over 30 years of manufacturing history since 1989 and is widely used as a food preservative, being a polyamino acid preservative. Polylysine is a natural food preservative produced through fermentation. Due to its high safety, we have received numerous requests to use it for various antibacterial applications.
