Mechanism of Ozone Water Sterilization Bacterial cells have a soft cell membrane made of proteins and lipids on the outside of their chromosomes, and a cell wall made of proteins, polysaccharides, and lipids on the outer side. When ozone is released into water, it reacts with moisture to produce OH radicals, which begin to oxidatively destroy the rigid cell wall. As a result, the cell permeability changes, enzyme activation is lost, and nucleic acids become inactive, leading to the death of the bacteria. Safety of Ozone Water The half-life of ozone water is very short, ranging from 10 to 60 minutes at 20°C to 25°C under normal pressure, and it easily decomposes upon contact with surrounding organic matter, resulting in no residual effects. In the case of hypochlorous acid, there is a lingering chlorine smell, and it reacts with organic matter in tap water to produce carcinogenic substances such as trihalomethanes. The absence of residual effects is the greatest feature of ozone water.
