In Indonesia, where ginger is consumed regularly, three types of ginger are cultivated: red, white, and yellow, with the red-skinned variety being called red ginger. Red ginger has a distinctive ginger aroma and spiciness, and due to its high content of active ingredients and essential oils, it can induce a feeling of warmth even when consumed in small amounts. In Indonesia, it is primarily used as a traditional medicine. Red ginger cannot be stored for long after harvesting, so it must be dried immediately. Ginger components include: gingerol, shogaol, cineole, limonene, linolenic acid, and caprylic acid. In the case of red ginger, in addition to the above components, two new essential oil components have been identified (according to a report from the Indonesian Ministry of Industry and the Agricultural Products Research Center (CABI)).
