The "G-K Series" is a group of green colorants derived from gardenia that are suitable for coloring confectionery and noodles. It consists of a mixture of gardenia yellow pigment, which is obtained from the fruit of the Rubiaceae gardenia through extraction with water or ethanol, or through hydrolysis to yield carotenoid-based crocin and crocetin, and a mixture of iridoid glycosides and protein hydrolysates contained in the fruit extract of the Rubiaceae gardenia, acted upon by enzymes to produce gardenia blue pigment, resulting in a yellow-green to blue-green color. 【Features】 ■ Appearance: Dark green liquid with a slight characteristic odor ■ Color: Exhibits a vivid green color when dissolved in water ■ Solubility: Soluble in water, hydrous alcohol, and hydrous propylene glycol; insoluble in fats and oils ■ Heat and light resistance: Relatively stable ■ pH - Yellow pigment components are somewhat unstable in acidic conditions - GK-S forms a precipitate at pH 4.5 or lower *For more details, please refer to the PDF document or feel free to contact us.
