In the traditional kombucha brewing process, open bottles or containers are used, and it takes about 30 to 40 days to complete a batch. Most of the microbial activity is concentrated at the liquid surface. On the other hand, Cetotec's self-aspirating aerator mixes the liquid and simultaneously provides sufficient oxygen to aerobic bacteria throughout the fermentation. By using Cetotec's fermentation technology, it is possible to significantly shorten the batch time to 2 to 4 days. The online measurement system (Alcocontrol) and automation control the concentrations of components such as acetic acid, gluconic acid, and alcohol to the required levels, ensuring a consistent product. The PLC equipped with fermentation software "ceto-Kombucha" optimally controls the process. Filling amounts and temperatures are monitored and controlled, and in addition to alcohol concentration measurement by Alcocontrol, pH and oxygen levels can also be measured. Aeration is variably operated according to dissolved oxygen concentration or frequency.
