basic information
In response to the outbreak of enterohemorrhagic E. coli food poisoning that occurred in a restaurant chain in April 2011, the standards for raw meat intended for consumption were set in September 2011 to require that "Enterobacteriaceae be negative." The Enterobacteriaceae testing also targets lactose non-fermenting enteric bacteria, which may be overlooked in E. coli testing, allowing for the assessment of microbial contamination in meat and other food products.
