Freeze-drying, also known as vacuum freeze-drying, is the process of sublimating frozen materials under vacuum conditions. In freeze-drying, drying occurs in an environment of 10 to 100 Pa (1/10,000 of atmospheric pressure, which is approximately 1013 hPa or 101,300 Pa).
