This technology achieves emulsification using ultrasound without the use of surfactants. Generally, to emulsify a mixture of water and oil that has separated into two layers, amphiphilic substances such as surfactants are used in combination with physical methods like homogenizers and mixers, and the resulting emulsified products are provided. On the other hand, surfactants impose a burden on the environment, and in recent years, there has been a growing demand for emulsified products that not only reduce the amount of surfactants used but also do not use surfactants at all. This technology not only reduces the environmental burden by not using surfactants but also has the potential to create emulsified products that have never been seen before.
