As you may know, soy sauce has a dark brown color. This is due to the browning that occurs during the manufacturing process. When it is in a container of the same color, it cannot be distinguished by visual inspection or the peak wavelength of transmitted light alone. Therefore, by using ultraviolet and blue light sources to measure transmitted light, we confirmed that a slight fluorescence could be observed. By confirming the fluorescence reaction, it is possible to detect the presence of soy sauce even in colored containers. The fluorescence reaction is a phenomenon that occurs when specific wavelengths are absorbed. These wavelengths vary depending on the substance. Additionally, not all substances exhibit fluorescence reactions; this phenomenon is observed in a limited number of substances.
