PEF lowers the necessary temperature in the malaxation process, resulting in a significant increase in the amount of EVOO. The malaxation time is also shortened, allowing for improved processing capacity. By creating pores in the olive cell membranes, oil extraction is enhanced. It is a reliable process at low temperatures, processed instantly, and can operate continuously for 24 hours. PEF can maintain and improve the quality of olive oil. Research using HPLC (High-Performance Liquid Chromatography) has shown that PEF treatment increases the biophenol levels in EVOO by 9 to 18%. The cost-effectiveness of PEF can be explained by the following simple calculation. PEF treatment can potentially increase oil yield from 20% to 22.7%. In an oil mill operating at 160 tons per day, PEF treatment could increase the daily production of EVOO by 4.33 tons (from 32 tons to 36.33 tons). Assuming the price of EVOO is between 310 yen and 620 yen per kg, this could result in additional sales revenue of 1,342,300 yen to 2,684,600 yen per production day.
