We would like to introduce a case study of the installation of a "filtering machine" at the N restaurant, which is a tonkatsu restaurant. A Y-2 type filtering machine was installed. After its introduction, the physical strain was significantly reduced, and the time spent on cleaning was shortened to about one-third. Additionally, as a byproduct, the amount of waste oil drastically decreased.
