We would like to introduce a case where we provided improvement proposals for the mold issue (pinholes) in confectionery at a cheese-based snack manufacturer. The company was packaging rare cheese snacks in plastic trays, including oxygen absorbers, and using a barrier structure for pillow packaging. However, they encountered a problem with mold growth and sought our consultation. Upon examining the distribution conditions, we found that while the product was sold in a "room temperature environment," it temporarily entered a "low temperature environment" during the manufacturing and distribution processes. Considering the issues, we revised the structure to a flexible film design, which resulted in zero occurrences of pinholes, and complaints about mold disappeared.
