The difference between surfactants and emulsifiers may not be widely known. Water and oil do not naturally mix. The boundary between the separated layers of water and oil is called the "interface." The functions of surfactants include emulsification, dispersion/wetting/permeation, foaming/defoaming, cleaning, softening/smoothing, static prevention, rust prevention, uniform dyeing/fixing, and sterilization, among others.
