The difference between surfactants and emulsifiers may not be widely known. Water and oil do not naturally mix. The boundary between the separated layers of water and oil is called the "interface." A substance that acts on this interface and alters its properties is called a surfactant. The functions of surfactants include emulsification, dispersion/wetting/permeation, foaming/defoaming, cleaning, softening/smoothing, static prevention, rust prevention, uniform dyeing/fixing, and sterilization, among others. Among surfactants, those used specifically for the purpose of mixing water and oil are called emulsifiers. Thanks to the action of emulsifiers, oil can be dispersed in water (O/W type | Oil in Water type) or, conversely, water can be dispersed in oil (W/O type | Water in Oil type). Common examples include milk and mayonnaise, which are O/W type, while butter and chocolate are W/O type.
