The Yuzu fruit, a specialty product of Yatsushiro City in Kumamoto Prefecture, reaches its peak season from January to March. To enjoy the deliciousness of Yuzu at any time, we process the fruit during its very tasty peak season. Yuzu has a fragrant yellow outer skin and thick white pith, which means that the processing and packaging are mostly done by hand. We process the fragrant outer skin, the bitter pith, and the refreshing, tangy flesh into a paste. After separating the Yuzu into its outer skin, pith, and flesh, we extract the best qualities of each during the cooking process and then combine them into a single mixture. The completed paste is temporarily frozen, and only the amount ordered is cooked before being packaged and shipped. The Yuzu paste is delicious because it is processed during the peak season of Yuzu and is made using a method that utilizes the Yuzu inherited from local farmers.
