Tamarind gum is a polysaccharide that is separated and purified from the seeds of the giant evergreen tree, tamarind, which grows in India and Southeast Asia. Tamarind gum has excellent heat resistance, and its viscosity does not decrease even during processes such as emulsification and sterilization that involve heating. It also has excellent acid and salt resistance, allowing it to demonstrate stable functionality in various formulations. Tamarind seed gum aqueous solutions exhibit Newtonian viscosity, showing almost constant viscosity regardless of the strength of shear (mixing force).
