How to quickly cool down pasteurized sake while keeping its quality fresh is important not only for maintaining the sake's quality but also as a measure against ethyl carbamate. However, when storing rapidly cooled sake in tanks immediately after pasteurization, there is a concern about the risk of spoilage. Therefore, we propose a closed-loop circulation cooling system called the "Simple Pasteurized Sake Rapid Cooling Device" for circulating and cooling pasteurized sake within the tank.
