The structure of alginate is a linear polymer composed of two types of uronic acids, mannuronic acid and guluronic acid, connected randomly. The structural units formed by the multiple connections of these two types of uronic acids are referred to as M blocks, G blocks, and random blocks, depending on the composition of the uronic acids. The higher the proportion of M blocks, the softer the material, while the higher the proportion of G blocks, the harder and more brittle it becomes, determining the gelation properties of alginate. The composition ratio of these blocks (M/G ratio) varies depending on the type and part of the raw algae, allowing for adjustments by carefully selecting the raw materials used.
