ε-Polylysine (hereinafter referred to as Polylysine) is a substance formally known as ε-Poly-L-lysine. It is a homopolymer consisting of 25 to 35 units linked by amide bonds, formed from the amino group at the ε position and the carboxyl group at the α position of the essential amino acid L-lysine. Since 1989, it has over 30 years of manufacturing experience and is widely used as a food preservative. Here, we introduce the safety of Polylysine.
