We made noodles by curdling domestic soybean milk with nigari, draining the water to the extreme, and shaping it into sheets before cutting it into noodle form. It is rich in soybean protein and has a chewy texture. In China, it is a popular ingredient for salads and stir-fries. Since the tofu is processed into noodle form, it can appeal to health-conscious consumers as a low-carb, high-protein, gluten-free ingredient. Depending on the preparation, the softness of the noodles can be adjusted.
