Cardamom, known as the "Queen of Spices," is the second most expensive spice after vanilla beans. Its origins are in Indonesia and the Indian subcontinent, and it began to be cultivated in South America during the colonial era. The shapes of Indian and Indonesian cardamom differ; the Indian variety is smaller and is called "shōzuku." On the other hand, the Indonesian Java cardamom has large, white, round pods, known in Japan as "byakuzuku." Inside the pods are numerous black seeds, which consist of various aromas that are not easily distinguishable, and the refreshing taste, reminiscent of mint, captivates people around the world.

It features a freshness comparable to that of Central and South American cardamom. It has a high quality with moisture content below 20 percent and volatile oil content above 3 percent.
