basic information
Cinnamon is a fragrant spice known as the "king of spices," obtained from the inner bark of trees in the Lauraceae family. It refers to the commercial spice produced by several plant species and their parts. Ceylon cinnamon (Cinnamomum verum, Cinnamomum zeylanicum), native to tropical regions such as Sri Lanka and South India, is considered the true cinnamon. Ceylon cinnamon is a rare spice, accounting for only 8% of global distribution. Its characteristic aromatic components include cinnamaldehyde, eugenol, and safrole. It is highly fragrant, and some refer to it as the "king of spices." Cinnamon originating from China and Indochina is called cassia (Cinnamomum cassia, Cinnamomum aromaticum) and is distinguished from Ceylon cinnamon. Cinnamon has been safely used as a spice for a long time, but coumarin, which is abundant in cassia, can potentially cause liver dysfunction, so caution is needed with long-term intake in gram quantities.
