"COS-YS" includes low molecular weight chitosan oligosaccharides ranging from chitobiose (disaccharide) to chitohexaose (hexasaccharide). ▶ As a food ingredient: Chitosan oligosaccharides have higher solubility in water compared to the polysaccharide chitosan, and their characteristic bitterness is also reduced. They can be easily incorporated into various processed foods, including health foods and dietary supplements such as capsules and tablets, as well as beverage products like soft drinks and nutritional drinks. ▶ As a research reagent: The structure of chitosan oligosaccharides contains highly reactive primary amino groups, allowing for various chemical modifications. In the recent field of carbohydrate engineering, the construction of various oligosaccharide chains focusing on the functions of cell glycans is progressing. ▶ As agricultural materials: Chitosan oligosaccharides have been found to exhibit antibacterial activity against plant pathogens and to activate the plant's defense mechanisms.
