We would like to introduce the measurement of "differences in fatty acid composition by type of tea leaves" that we conduct. Tea is basically made from the same tea leaves, but the manufacturing processes differ. Sencha is made without fermentation, while oolong tea and black tea undergo fermentation processes. As a result, the proportions of fatty acids in the lipids contained in each type of tea and the amounts of each fatty acid vary. Here, we present the results of measurements regarding the differences in fatty acid composition by type of tea leaves.
