5-ALA (5-Aminolevulinic Acid) is a type of natural amino acid found in the bodies of plants and animals. It is known for activating mitochondria and is said to have effects such as fatigue recovery and mood enhancement when taken orally. This document presents a case study where the content of 5-ALA in black vinegar, amazake, sake, and wine, which are generally considered to have high levels, was quantified using LC-MS/MS. For black vinegar and amazake, analyses were conducted on two different products, and the quantification results were compared.
