[Usage Example] How to Make Delicious Soba Noodles
Ishikawa-style automatic mortar and pestle No. 2
Soba No. 2 - A renowned machine for water management in soba (buckwheat noodles).
■Overview This introduces how to make handmade soba using Soba No. 2. Some may wonder if it can still be called handmade soba when using a machine. According to Article 4 of the Fair Competition Code regarding the labeling of fresh noodles, it can still be considered handmade even when using our equipment.

basic information
The pestle comes with two pieces, made of wood (Kaba-zakura). Stone mill (granite) with a capacity of 20 liters. The amount of buckwheat flour is suitable for handling from approximately 0.5 kg to about 4.0 kg. The stone mill rotates in the opposite direction to the rotation of the pestle. This machine is ideal for each store to make freshly crafted hand-made soba (buckwheat noodles). It is said that the process of kneading the buckwheat flour (from the water mixing to the kneading stage) is crucial for making delicious hand-made soba. The Ishikawa-style mixing and grinding machine, Soba No. 2, performs this important task with a quality surpassing that of human hands. Our product efficiently carries out the most challenging task in soba making, which is the water mixing process. There is a traditional saying in soba making that goes, "One mixing, two rolling, three cutting." Mixing refers to the process of combining buckwheat flour and water in a wooden bowl to form a dough ball. Rolling involves flattening the dough with a rolling pin, and cutting refers to slicing the rolled soba dough with a knife. The process of making hand-made soba can be broadly divided into three stages, arranged from the most difficult techniques: "one kneading, two rolling, three cutting." Additionally, to emphasize the difficulty, there is an expression that states, "Three days for cutting, three months for rolling, three years for mixing."

Our company is a specialized manufacturer of automatic mortar and pestle machines. The features of the automatic mortar and pestle (Ishikawa-style stirring and grinding machine) include the ability to simultaneously perform stirring, grinding, mixing, and kneading using unique technology. It has the following basic capabilities: 1. Uniform and precise mixing is possible - Allows for uniform mixing while controlling particle size. 2. Easy uniformity and control of particle size - Can achieve uniform particle size while finely grinding. 3. Prevents excessive deterioration of materials - Due to low mechanical stress (mild processing energy), it can process while suppressing over-grinding and chemical changes. - High-energy processing (such as ball mills) can cause reaction changes due to heat generation, but temperature management is easier with the automatic mortar and pestle. 4. Suitable for small-scale prototyping and experiments - Ball mills and planetary mixers require large amounts of raw materials, but the automatic mortar and pestle can prototype with a minimum of 0.5g. - Easily adaptable for process scale-up (easy application from small to large scale). 5. Capable of processing slurries, pastes, and high-viscosity materials - The motor torque for the pestle rotation is high, allowing for processing of high-viscosity materials.
