Top freezer for cryogenic preservation that locks in freshness. It is ideal for freezing rice, which is generally considered difficult to freeze (it returns to its original state with natural thawing), as well as sashimi such as flounder, sea bream, sea urchin, and oysters, and for freezing sushi (with toppings placed on rice). It allows for the freezing of additive-free, healthy foods at the production site, enabling them to be enjoyed safely and deliciously at a low cost in the consumer area. Our rapid freezing storage uses electric refrigeration and liquefied carbon dioxide, incorporating know-how to allow the interior to "breathe." The key to producing good frozen foods is how quickly it can pass through the freezing point, and the top freezer is one of the few rapid freezing units that can meet this condition. We also have demo units available for rental, so please contact us once. In addition to batch-type units, we also offer continuous rapid freezing units. Despite being continuous, they have a structure that allows the interior to breathe.
