In HACCP, the core temperature of food after heating and the temperature of food after cooling are often selected as CCPs (Critical Control Points), and it is considered very important to record and store the work related to these processes. With ACALA FT, you can easily record "who," "when," "what was measured," and "what the temperature was" using a handheld core thermometer and a dedicated reading terminal. The data is stored in an unalterable state on a cloud server, significantly improving the reliability of the data compared to handwritten records. Administrators in remote locations can manage data from multiple sites collectively, and it is also possible to eliminate oil-stained paper records and move towards a paperless system. ACALA FT allows for easy linking of records for continuous cooking processes such as "heating → cooling → reheating." When considering the management of CCPs with the introduction of ACALA FT, we recommend first implementing the temperature management system ACALA MESH for refrigerators and freezers, which is important as a PRP (Prerequisite Program).
