"Fromage EVs" is a high-content ingredient derived from cheese-born EVs and exosomes. Whey, a byproduct of cheese production, is utilized in products like protein, but a significant amount is still discarded, with approximately 400,000 tons of whey wasted annually in Japan alone. Our company has discovered that the discarded whey contains a substantial amount of extracellular vesicles (lactic acid bacteria EVs) and milk exosomes. We will purify fractions rich in lactic acid bacteria EVs and milk exosomes from the whey and introduce them as high-value-added ingredients into the cosmetics and functional food markets.
