In the manufacturing of commercial side dishes (cook packs), there was a challenge that longer retort pressure times could compromise flavor. Therefore, the focus is on designing a process that minimizes pressure and quickly freezes the product. In fact, the timing and method of freezing are key to preserving deliciousness.
The VE freezer can rapidly lower the core temperature, effectively suppressing the deterioration of taste and texture. Furthermore, to eliminate cooling unevenness caused by traditional stacking, we propose a parent-child cart that allows for the insertion of retort trays. This ensures a pathway for cold air and achieves high-efficiency freezing at 250 kg/h. We have also considered the workflow by suggesting an in-cabinet rail system and a one-way layout. This system contributes to labor-saving on-site while stabilizing freezing quality. "We are not doing anything special," but "there are clever ideas that determine the taste" here.
