Understanding the protein and moisture content of raw soybeans at all times is essential, so we have introduced the non-destructive and rapid near-infrared measurement device, Infratec NOVA, for component analysis of soybeans. This is reflected in the tofu preparation conditions.
【Rapid measurement of protein and total solids】
The Milkoscan Mars is a rapid component testing device for raw milk, with calibration curves for protein, fat, total solids, and non-fat solids, which we have applied to the soy milk testing used in tofu production. This has clarified the protein and total solids content of the soy milk produced daily, allowing for confirmation of the optimal protein amount before adding coagulants.
