**Features** ○ Fast heat transfer rate The heating rate of the material increases rapidly due to condensation heat transfer in the initial stage of overheating. ○ High sterilization effect Rapid heating utilizing moisture condensation on the material surface, and during constant rate drying at atmospheric pressure with steam, the temperature can rise to 100°C and maintain that temperature, resulting in a high sterilization effect. ○ Heating treatment possible in a minimal enzyme atmosphere By completely replacing air with superheated steam, the enzyme concentration becomes extremely dilute, allowing for heating treatment in an atmosphere similar to that of inert gases. ○ Sterilization, cooking, and processing of various food items possible Utilizing condensation heat transfer, thawing and baking of seafood, meat, and prepared dishes is possible.
