While possessing the characteristics of fine snow, it excels in shear resistance, heat resistance, acid resistance, and shape retention. When used in custard cream, it demonstrates excellent shape retention and heat resistance, has no stringiness, and, like fine snow, is smooth and enhances the flavor of the ingredients (milkiness).
