Technical Data of Automatic Titration Device: Measurement of Saponification Value of Edible Oils
Measurement of the saponification value of canola oil (rapeseed oil) and olive oil using an automatic titration device.
The saponification value is an important indicator used for the characteristic evaluation and quality assessment of edible fats and oils. Furthermore, the saponification number provides information about the average molecular weight of all the fatty acids present. The higher the saponification value, the lower the molecular weight of all the fatty acids. This application note describes the titrimetric measurement of the saponification value of canola oil and olive oil. This analysis is conducted in accordance with the EN ISO 3657 standard and is based on modifications of the AOAC 920.160, ASTM D5558, USP <401>, and Ph. Eur. 2.5.6 guidelines. By using potentiometric indicators, very accurate results can be obtained for a wide range of edible oils and animal fats, as well as for waxes and other products with high saponification values.
