This product, "Gardenia Blue," is a natural pigment extracted from the fruit of the gardenia plant (Rubiaceae) through various manufacturing processes. The main coloring component is the carotenoid gentiobiose, and gardenia yellow is provided as a yellow liquid or brownish-yellow powder, while gardenia blue is offered as a blue liquid or deep blue powder. Both pigments easily dissolve in water and ethanol solutions but are insoluble in acetone and fats.
