At that moment, it provides heat close to 539 kcal/kg to the thawing items, allowing for quick defrosting at a humidity suitable for the ingredients, thereby preventing color and flavor loss. It is suitable for raw items like sashimi, nigiri, and bento boxes. It is expected to improve quality through reduced drip loss and save on running costs.
