Technical Data: Monitoring of Frying Oil Using FT-NIR

A valuable tool for food quality assurance and health authorities to verify the degree of fat deterioration!

Using FT-NIR spectroscopy, various quality parameters associated with the degradation of frying oil can be evaluated quickly and at low cost. Bruker has collaborated with multiple food regulatory agencies to collect over 300 samples of fats used in fried potatoes, potato chips, fish, chicken, and donuts. Statistical evaluations have shown that the measured FT-NIR spectra have a high correlation with existing official methods. X-ray photoelectron spectroscopy (XPS) is ideal for analyzing surface contamination, discoloration, and other evaluations because it provides elemental information from the outermost surface of the sample (a few nm).

A defect occurred where the surface of the polyimide film became hydrophobic, but due to the depth of information obtained from SEM/EDX analysis, the specific elements present on the very surface could not be detected. Therefore, we conducted surface analysis using X-ray photoelectron spectroscopy (XPS), which is a surface-sensitive method. "X-ray photoelectron spectroscopy (XPS) analysis" involves irradiating the sample surface with soft X-rays and measuring the binding energy of the emitted photoelectrons. It allows for the examination of the elements and composition of the sample (qualitative and semi-quantitative analysis) as well as the chemical states of the elements (state analysis). The information detected pertains to the extreme surface layer of the sample (a few nanometers), and by combining it with Ar ion sputtering, depth profiling measurements can also be conducted. Since the excitation source is soft X-rays, it is possible to measure samples that are non-conductive. EEPS can be retrofitted to PTT! By reducing the number of moving parts inside the device, we achieve low maintenance requirements.

The "3095 (3098 PTT PLUS 3090 EEPS(TM))" is a particle size distribution measurement device that supports reduced loss rates and sampling at high back pressure. The 3090 EEPS measures the particle size distribution of PM emitted from engines in real-time. The 3098 PTT consists of a dilution mechanism using PTT and a volatile particle removal mechanism known as CS.
