At the Japan Food Function Analysis Institute, we conduct microbiological tests such as total viable count, E. coli count, Staphylococcus aureus, and Salmonella. To prevent food poisoning and spoilage, regular verification of quality and safety through microbiological testing tailored to the characteristics of the products is necessary. We also examine changes in bacterial counts when food is stored under specific conditions. Data on bacterial count changes due to storage is extremely important for quality control.
