A natural amino acid polycation polymer that can be used in food preservatives, hygiene materials, and daily necessities. It is a safe material as it is a fermentation product produced by natural microorganisms.

E-Polylysine(hereinafter referred to as Polylysine) is a substance officially known as ε-Poly-L-lysine. It is a homopolymer consisting of 25 to 35 units linked by amide bonds, formed from the amino group at the ε position and the carboxyl group at the α position of the essential amino acid L-lysine. Since 1989, it has over 30 years of manufacturing history and is widely used as a food preservative amino acid. As a product of natural microbial fermentation, it can reduce the use of synthetic food preservatives derived from chemical substances. Polylysine is a cationic polymer with a positive charge. It electrically binds to negatively charged microbial cell membranes, inhibiting microbial growth. Polylysine is listed in the existing additive inventory of the Ministry of Health, Labour and Welfare (No. 397). When conducting structural analysis of organic compounds, IR, NMR, and MS can be considered the three sacred treasures. If the analysis is performed correctly, it is possible to elucidate the structure of even quite complex compounds. However, actual spectra are often not of a single compound, as seen in textbooks, which can lead to significant challenges in interpreting results for beginners in analysis. Additionally, while database searches are a useful tool in structural analysis, the ability to read spectra is necessary to select the correct structure from among the candidates, not just pattern matching. In this course, we will lecture on the basic ways to interpret IR, NMR, and MS spectra, including simple explanations of principles, points to be aware of during analysis, and how to proceed with actual analysis, incorporating some exercises as well.
