[Case Study] Comparison of Volatile Components in Meat Sauce Using GCMS

A high-resolution GCMS workflow that clarifies the differences in the constituent components of various foods.

The processed foods we consume develop unique flavors and aromas due to various differences in the quantities and origins of the ingredients used, as well as cooking times, even if they share the same name. Understanding these differences at the component level is crucial in food research, and the use of GC/MS methods is expected to shed light on volatile components, which are believed to be factors influencing aroma. Non-target analysis that encompasses all contained components has been considered challenging due to the vast amount of information and the complexity of analytical operations. To obtain reliable results, efficient sampling methods, chromatographic separation, advanced mass separation, and software for smooth statistical analysis of the data are required. In this technical document, we present a workflow using high-resolution GC-MS (Orbitrap GC-MS) and Compound Discoverer software for low molecular analysis, as a solution to smoothly and accurately address this complex food comparison, exemplified by the inter-sample comparison of commercially available meat sauces from three food manufacturers.

[Case Study] High-Precision PAH Quantification in Edible Oils Using High-Resolution GCMS

Achieving accurate and highly sensitive quantification of polycyclic aromatic hydrocarbons (PAHs) using high-resolution GC-MS.

Polycyclic aromatic hydrocarbons (PAHs) are components generated from the heating of organic materials, and due to concerns about their carcinogenicity and other health effects, PAHs present in food are regulated in some countries and regions. In particular, edible oils may undergo heating as a pretreatment during extraction from raw materials, which raises the possibility that PAHs could be generated during the thermal processing, even if the raw materials themselves do not contain PAHs. Since various countries have established standard values for PAHs, safety inspections may be required when exporting food abroad. These standard values are becoming stricter year by year, and high-sensitivity detection measurement devices are needed to accurately quantify these standard values. This application note presents a case of highly sensitive quantification of PAHs without interference from matrix components, achieved using the high mass resolution and mass accuracy of the Orbitrap GC-M system, a high-resolution GCMS. Data acquisition is performed through full scan measurements, making method development easier and enabling retrospective analysis (such as checking whether newly regulated components were present in previously measured samples).

Reliable simultaneous analysis of 325 pesticide components in food matrices unaffected by interference using high-resolution GC-MS.

In the quantitative analysis of pesticide residues in food, triple quadrupole mass spectrometers such as GC-MS/MS and LC-MS/MS are commonly used. This is because they can separate trace amounts of pesticides from the food matrix and detect peaks with high sensitivity. On the other hand, our Orbitrap mass spectrometer allows for advanced mass separation, enabling the detection of pesticide peaks without interference from the food-derived matrix. This application note introduces a simultaneous analysis of 325 pesticide components using a GC-Orbitrap mass spectrometer. The Orbitrap mass spectrometer facilitates method development for data acquisition in Full MS measurements, and its high mass accuracy allows for the precise estimation of molecular formulas for each fragment ion, providing reliable quantitative information.
