Glycation of LDL has been reported to interfere with the normal metabolism of cholesterol and is involved in thrombus formation, which contributes to the progression of atherosclerosis. When human serum-derived LDL was glycated with glyoxal, the amount of CML produced was measured, and it was confirmed that the addition of Hishi extract inhibited the generation of GML in LDL in a concentration-dependent manner.
