This product, "Safflower Yellow," is a natural food coloring extracted and refined from the petals of safflower (Carthamus tinctorius L.), a plant in the Asteraceae family. The main coloring component is yellow flavonoid glycosides, and the product is available as a yellow to brownish-yellow powder that dissolves in water and ethanol solutions. It is insoluble in acetone and fats. This product has a characteristic safflower scent, vibrant and high coloring power, and excellent light and heat resistance. Under acidic conditions, the aqueous solution exhibits a stable yellow color, and it has the property of not easily changing color during food processing. For food applications, it can be used in a wide range of fields including alcoholic beverages, tea drinks, high-end confections, noodles, candies, canned goods, pharmaceuticals, and cosmetics.
