We would like to introduce the measurement of "differences in fatty acid composition by type of tea leaves" that we conduct. Tea is basically made from the same tea leaves, but the manufacturing processes differ. Sencha is made without fermentation, while oolong tea and black tea undergo fermentation processes. As a result, the proportions of fatty acids in the lipids contained in each type of tea and the amounts of each fatty acid vary. Here, we present the results of measurements regarding the differences in fatty acid composition by type of tea leaves. Sphingolipids are universally present in animals and plants, functioning as essential membrane lipids in cells. In some animals, such as humans, ceramides contained in sphingolipids serve as the main component of extracellular lipids in the stratum corneum, supporting the skin barrier function. As a result, ceramides have seen a rapid increase in demand as functional ingredients in basic skincare products and functional foods in recent years. Currently, plant-derived lipids are being used as a safe and inexpensive source of ceramides; however, plants contain very little free ceramide that is similar to that found in human skin, with most existing as less bioavailable glycosylceramides. We aim to develop metabolic engineering techniques to stably produce high-value ceramides by utilizing the functions of enzyme genes involved in the synthesis and degradation of plant glycosylceramides. Additionally, research is being conducted to modify the inherent sphingolipid functions of plants to enhance the accumulation of plant oils that can be used as biofuel materials and functional proteins in seeds.

[Application Note] Reducing Microbial Contamination Risks with TOC

In the food and beverage industry, effective cleaning of manufacturing equipment is essential to deliver high-quality and safe products to consumers. It is particularly important to appropriately reduce the risk of contamination by microorganisms. According to the FDA, the primary cause of product recalls in the food and beverage industry in 2017 was product contamination by microorganisms. Therefore, proper cleaning processes are required to reduce microbial contamination. Additionally, it is important to have means to verify the effectiveness of the cleaning process. TOC (Total Organic Carbon) is a widely adopted non-specific analytical method for detecting potential contaminants such as product residues, detergents, and microorganisms. To use TOC, it is necessary to consider the recovery rates and linearity of substances that may remain after cleaning. While testing for chemical contaminants and compounds using TOC is common, there is limited information regarding the recovery rates of microorganisms. By using the Sievers M9 TOC analyzer, it is possible to detect microbial residues at lower concentrations than visual inspection in cleaning evaluations. TOC analysis is effective for measuring residues, monitoring cleaning processes, and reducing overall risks. This enables more accurate and efficient microbial management in the cleaning evaluation of manufacturing equipment.
