We would like to introduce our "Norovirus Test." In 2017, the Ministry of Health, Labour and Welfare revised the "Hygiene Management Manual for Large-Scale Cooking Facilities," stating that food handlers should strive to conduct norovirus testing at least once a month from October to March, or as needed. The infectiousness of norovirus is extremely strong, with reports suggesting that infection can occur with fewer than 100 particles. While basic hygiene management, such as handwashing, is certainly important for prevention, early detection of carriers and keeping them away from cooking and food can reduce the risk of food poisoning and transmission to others.
