This product, "Natural Cocoa Pod Colorant (Cacao Color)," is a natural food colorant derived from the fruit pod of the cacao plant (Theobroma cacao) of the Sterculiaceae family. It is obtained through acid washing and water washing, followed by extraction and filtration purification in an alkaline aqueous solution. The main coloring component is polyflavonoid glycosides, and the product is provided as a brown powder that easily dissolves in water and ethanol solutions. Its characteristics include being odorless, hygroscopic, having excellent coloring power, and high light and heat resistance. It exhibits a chocolate color at a pH of 4.0 or higher, and the color tone is stable.
