Kefir is a type of fermented milk, similar to yogurt. While yogurt is fermented with lactic acid bacteria, kefir is made through fermentation by both lactic acid bacteria and yeast. Additionally, soy milk kefir is created by adding soy milk to kefir grains that contain lactic acid bacteria and yeast, and then fermenting it.
