Polylisine

Polylizin is a fermentation product produced by microorganisms. Due to its excellent properties as a food preservative, it is used to preserve many foods. Polylizin is listed in the existing additive registry of the Ministry of Health, Labour and Welfare (No. 397). Example of labeling: Preservative (Polylizin). Polylizin exerts a bacteriostatic effect by electrically attaching to microorganisms and inhibiting their growth.

Amino acid-derived natural cationic polymer that can be used in food preservatives, hygiene materials, and daily necessities. It is a safe material as it is a fermentation product produced by natural microorganisms.

ε-Polylysine (hereafter referred to as Polylysine) is a homopolymer consisting of 25 to 35 linked ε-amino groups of L-lysine, an essential amino acid for humans, and α-carboxyl groups through amide bonds. With over 30 years of manufacturing experience, it is an amino acid-derived preservative widely used as a food preservative, making it applicable in sanitary materials and more. For example, it is expected to reduce synthetic polymers in everyday items closely related to daily life, such as wet wipes, toothpaste, shampoo, and scalp care products. Even in the presence of chelating agents used as antioxidants in cosmetics, various detergents, chemicals, and pharmaceuticals, it exhibits excellent antibacterial properties. "Polylysine" produced by JNC has been certified as GRAS by the US FDA.

Polycations derived from amino acids that can be used in food preservatives, hygiene materials, and daily necessities. JNC's "Polylysine" has obtained GRAS certification.

Polylysine is widely used as a food additive and, thanks to its GRAS certification (Note) from the U.S. FDA, is recognized as a global standard food preservative. As of August 2, 2022, the only polylysine with FDA GRAS certification is the polylysine produced by JNC Corporation. Polylysine is a naturally occurring amino acid-derived substance produced by microbial fermentation, similar to miso, soy sauce, yogurt, and other products. Polylysine ionically adsorbs to microorganisms, inhibiting their growth. Due to its broad antibacterial properties and excellent flavor-preserving properties, it is primarily used to extend the shelf life of foods, and is used in a wide range of food products, including ekiben (boxed lunches), soraben (boxed lunches sold at supermarkets), and prepared meals. Note: GRAS (Generally Recognized as Safe) is a safety standard certification given to food additives by the U.S. Food and Drug Administration (FDA). Polylysine exhibits stable antibacterial effects at low concentrations across a wide pH range from weakly acidic to weakly alkaline. Many foods we consume have a pH close to weakly acidic to neutral.
