This product is developed and manufactured by Rihyōhō Freeze Systems Co., Ltd., and it is a device that allows for freezing food without compromising its freshness. Fresh foods such as fish and meat, when frozen, have their cell moisture freeze into ice, which destroys the cells, resulting in a large amount of drip (the outflow of cell liquid containing umami) during thawing, causing a loss of freshness. This food freezing device (Useful Freezer) enables the freezing of food with almost no drip during thawing, thanks to the proton freezing technology developed by the company. Therefore, the freshness of the food is not compromised. Proton freezing is a technology that uses magnetic lines and electromagnetic waves to create numerous ice nuclei when the moisture in the food freezes into ice, forming small ice crystals, minimizing the expansion of the food, and freezing it quickly and evenly with uniform cold air circulation. Food frozen using proton freezing can maintain minimal freshness degradation even during natural thawing, but if thawed using the Fusion Defreezer, also developed by the company, it can be thawed with even better quality.
