The malaxation time is also shortened, allowing for improved processing capacity. By creating pores in the olive cell membranes, oil extraction is enhanced. It is a reliable process at low temperatures, processed instantly, and can operate continuously for 24 hours. PEF can maintain and improve the quality of olive oil. Research using HPLC (High-Performance Liquid Chromatography) has shown that PEF treatment increases the biophenol levels in EVOO by 9 to 18%. The cost-effectiveness of PEF can be explained by the following simple calculation. PEF treatment can potentially increase oil yield from 20% to 22.7%. In an oil mill operating at 160 tons per day, PEF treatment could increase the daily production of EVOO by 4.33 tons (from 32 tons to 36.33 tons).
